How to Use Chocolate Molds

Using molds to make chocolates is very simple and is the same no matter if you use plastic, silicone, or polycarbonate chocolate molds.  Just follow these simple steps:

 

 

  • Make sure there is enough room in your freezer or refrigerator to place the molds. 

 

  • Melt the chocolate.

 

  • Fill the cavities on the mold.  This can be done by using a spoon, a pastry decorating bag, or by pouring. 

 

  • Try not to overfill the mold as this will lead to a mess and you will have to trim the edges after you take the chocolate out of the mold.  If you do overfill, run a scraper or something with a straight edge over the top of the mold to get rid of the excess chocolate.

 

  • Once the mold is filled, lightly tap in on the counter to get rid of any air bubbles and make sure all the spaces are filled.

 

  • Place the filled mold in the refrigerator or freezer until the chocolate looks like it has hardened and separated from the mold.

 

  • Once hardended, carefully remove the chocolate from the mold.  For plastic or silicone chocolate molds, you can flex the mold to wiggle the candy out.  For polycarbonate chocolate molds, you should be able to just turn the mold over and the chocolate will fall out on its own.

 

  • If the edges of the chocolate are rough, you can clean them up by running a butter knife along the edge.

 

  • Try not to touch the chocolate face too much, as it will melt and leave fingerprints.
