How to Clean Chocolate Molds
It is very important to learn how to properly clean your chocolate molds for health considerations. If chocolate or sugar residue is left on the mold, bacteria can develop and be brought into the candy making production cycle. Also, improper cleaning methods can destroy the mold.
Generally it is best to wash chocolate molds in warm water with low pressure. It is ok to use detergents that are not high alkaline cleaners. Brands such as Joy or Palmolive are recommended. Do not leave the molds soaking in water or cleansers for a long period of time. Do not use scrapers or razors. Do not put chocolate molds in the dishwasher. Always rinse with warm water after cleansing.
Make sure to dry the chocolate molds well, with a lint free cloth. You may also wish to shine them with a cotton ball. Following the mold drying step is important because water spots left in the mold can ruin the appearance of your finished chocolate.
