How to Make 3d Chocolates - Hollow and Solid

To make a hollow or solid three dimensional chocolate piece you need to use a special type of mold.  This type of chocolate mold will come in two parts.  Some 3d molds are open bottom and others are closed bottom.  Most hobby molds are closed bottom.  This just means that when the two pieces are put together there is no opening to pour chocolate.  An open bottom mold will have such an opening.
 
To make a hollow chocolate, you will use a closed bottom mold.  To use the mold, simply take one side of the mold and fill it partially with melted or tempered chocolate.  The amount you pour in will be dependent on how thick you want the wall of the chocolate to be.  Once you have poured in the chocolate, put the two mold pieces together as close as a fit as possible.  Clip the two mold halves together.  Now carefully rotate the mold until the chocolate has coated all the surfaces and there are no air bubbles.  This can be done by hand or by use of a chocolate spinning machine.  Refrigerate or let the chocolate set as normal.  After the chocolate has set, remove it from the mold.  You may need to do some trimming to the area where the two molds met.
 
To make a solid chocolate, you can use either a closed bottom or open bottom mold.  If using the closed bottom molds, you will pour chocolate in each side of the mold and let set as normal.  You will then need to use chocolate, freeze spray, or some other method to adhere the two halves together.  To use an open bottom mold, you will clip the two mold halves together and turn them upside down so the opening is at the top.  You then pour the chocolate in the mold until it is filled and let set as normal.  When the chocolate is ready, remove it from the mold.  You may need to do some trimming around the area where the mold opening was.
